For being one of the most nutrient-dense, protein-rich and economical foods ever, lentils don’t seem to get a ton of love here in the US. Lately, we’ve been adding them into soups and stews for their texture, added protein, fiber, and plethora of health benefits. We love experimenting in the kitchen, always looking for ways to create flavorful and nourishing bone broth-based dishes. Combine lentils with garbanzo beans and you’ve got yourself one satiating and nourishing meal! Garbanzo beans, like lentils are high in protein and fiber, and have even been shown to lower LDL cholesterol! There’s definitely a case to be made for both of these ancient legumes.
Spicy French Lentils with Turmeric and Lime
Serves: 2-4 | Prep Time: about 5 minutes | Cook Time: about 30 minutes
INGREDIENTS
- 1-2 tablespoons oil
- 1 small onion- diced
- 2 garlic cloves, finely minced
- 2 teaspoons turmeric powder
- 1 teaspoon cumin
- 1 teaspoon sea salt
- 1 teaspoon cayenne, or to taste
- 2 pouches Bare Bones Classic Beef Broth
- 2 cups water
- 1 can garbanzo beans, drained and rinsed
- 1 cup french green lentils
- ¼ cup fresh lime juice
- ½ cup chopped cilantro
METHOD
In a soup pot, heat oil over medium-high heat.
Sauté the onion and garlic until fragrant (about 5 minutes), then add the dry spices, stir and continue to cook or another minute or so to toast the spices.
Add bone broth, water, green lentils and garbanzo beans. Increase heat to bring to a boil, then reduce heat to medium, cover, and allow to cook until lentils are tender (about 20 minutes).
Remove from heat, stir in lime juice and cilantro and season with salt to taste.
Serve with slices of fresh lime and enjoy!
