Sweet & Savory Onion Jam

Onion Jam: the Swiss Army Knife of summertime sauces

Summer is awesome for many reasons be it the weather, vacations, or memories. My favorite happens to be the food. Summer means grilling, and grilling season means mean burgers, backyard barbecues, and good times. We wanted to share one our favorite burger condiments, a sweet & savory onion jam, that we have on-hand all summer long. You can spread it on your bun or even fold it into your beef when making the burger patties, both of which you will never live to regret. Put an egg on it too, or put it in an omelette, or in you next bowl of savory oats! We use it for all these reasons and more, but the sky is the limit.

Sweet & Savory Onion Jam  

Yield: 2 | Prep Time: 5 minutes | Cook Time: 30 minutes 
 
INGREDIENTS
  • 3 large yellow onions, sliced thin
  • ¼ cup parsley
  • ½ cup sugar 
  • 1 cup beef bone broth
  • 2 tbsp white balsamic vinegar
  • Salt and pepper to taste
METHOD

Preheat a skillet and coat the bottom with olive oil.

Sauté the sliced onions and chopped parsley until the onions start to turn translucent.

Sprinkle the sugar over the onions and cook, without stirring, until the sugar melts, about 5 minutes.

Stir and increase the heat to high and cook until an amber-brown caramel forms, about 6 minutes. 

Reduce heat back to medium, add beef bone broth and vinegar and allow to simmer until onions and broth thicken together, about 12-15 minutes. 

Add salt and pepper to taste; then, using a potato masher, mash the onions.

Serve with crackers, pretzels, on your favorite sandwich or burger, or with our Bacon-Wrapped Meatloaf.

Transfer the mixture into a small canning jar or storage container.
